Vegan Menudo


Serves: 4

Ingredients

1 cup dried onion, frozen or fresh
2 teaspoons chopped garlic, fresh or jarred organic
1/4 teaspoon dried oregano
1 (6-ounce) package refrigerated or frozen chicken substitute strips, (soy strips)
1 (12-ounce) jar salsa verde
1 (14-ounce) can vegetable broth
1 (4-ounce) can diced green chili
1 (15-ounce) can white whole hominy (posole), drained
1 tablespoon ancho chili powder or other chili powder
1 tablespoon lime juice, fresh or bottled organic
cooked white rice, for serving (optional)

Directions:

Heat the onion, garlic, and oregano in a large, covered saucepan over medium heat until soft, about 4 minutes, stirring once or twice. Add the remaining ingredients and simmer for 5 minutes. Serve with rice, if desired.
