Polenta Pan Pizza

Ingredients

1 1/4 cups water
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup instant polenta
1 cup fresh diced tomato
1/2 cup shredded mozzarella cheese
1/4 cup shredded imported Parmesan cheese
pinch of dried oregano

Directions:

Heat the oven to 375°F. Heat the water, salt, and pepper in a sauce-pan over medium-high heat until boiling. Stir in the polenta and cook until thick, about 4 minutes. Spread across the bottom of a 9-inch pie pan. Top with the tomato, cheeses, and oregano. Bake until the polenta is crisp on the edges and the cheese is melted, about 15 minutes. Cut into wedges to serve.
