Sweet Potato And Apple Vichyssoise

Ingredients

2 tablespoons unsalted butter
1 cup diced onion, fresh or frozen
1 (15-ounce) can yam in syrup, drained
1/2 cup unsweetened applesauce
2 cups vegetable broth
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup heavy cream or half-and-half
2 tablespoons chopped chives, fresh or dried

Directions:

Heat the butter in a large saucepan over medium heat add the onion and sauté until lightly browned, about 8 minutes. Cool.

Puree the onion, yams, applesauce, and broth in a blender or food processor. Scrape into a serving bowl and stir in the salt, cinnamon, cream, and chives. Refrigerate until thoroughly chilled before serving.
