No-Chicken Noodle Soup

2 (32-ounce) containers vegetarian chicken broth, such as Imagine Organic No-Chicken broth
1 carrot, peeled and thinly sliced
1 rib celery, thinly sliced
6 ounces spaghetti, broken into thirds, regular or whole grain
1/4 teaspoon dried poultry seasoning
salt and ground black pepper to taste
8 ounces wheat gluten (seitan), cut into 1/2-inch pieces
2 tablespoons chopped Italian (flat-leaf) parsley


Heat the broth, carrot, and celery in a large saucepan until simmering simmer for 5 minutes. Add the spaghetti, poultry seasoning, salt, and pepper and cook until the noodles and vegetables are tender, about 8 minutes. Stir in the seitan and parsley, heat through, and serve.
