Feta And Potato Pizza

Serves: 2

1 prepared pizza shell, such as Boboli
1/2 cup roasted pepper spread or pesto
1 (9-ounce) package frozen roasted potato with garlic and herbs, thawed
4 ounces crumbled feta cheese (about 1 cup), with or without herbs


Heat the oven to 450°F. Place the pizza crust on a sheet pan. Spread the pepper spread over the crust, up to the rim. Top with the potatoes and feta and bake until bubbling, 10 to 12 minutes. Rest for about 5 minutes, then cut into wedges and serve.
