Curried Pumpkin Soup

Serves: 6
Total Calories: 216


1 (15-ounce) can Libby's 100% pure pumpkin
1 (14-ounce) can vegetable broth
1 (13-ounce) can coconut milk
2 cups Curry Simmer Sauce or 1 (16-oz) jar cooking or simmer sauce
1 cup apple juice
salt and ground black pepper to taste
1 tablespoon chopped cilantro


Combine the pumpkin, vegetable broth, coconut milk, curry sauce, apple juice, salt, and pepper in a large saucepan and heat until simmering simmer for 5 minutes. Stir in the cilantro, and serve.
