Spinach Corn Bread Puff

Ingredients

10 1/2 ounces frozen chopped spinach
1 (7-ounce) box cornbread mix
4 eggs, beaten
6 tablespoons butter, melted
1 medium onion
1 (8-ounce) carton cottage cheese
1/2 teaspoon salt

Directions:

Thaw spinach and squeeze out all the water. Combine spinach and all remaining ingredients. Stir just until moistened. Pour into greased 9- inch pie plate. Bake at 400° for 25 minutes or until lightly browned.

Editor's Extra: Older recipes show larger sizes; you’ll likely find a 10- ounce box of spinach and a 6-ounce package of cornbread mix . . . works deliciously.
