Spinach Cheese Squares

Ingredients

1 (10-ounce) bag fresh spinach
3 eggs
1 cup flour
1 cup milk
1 teaspoon salt
1 teaspoon baking powder
3/4 pound sharp cheddar cheese, grated
1/4 cup margarine (not butter)

Directions:

Wash spinach, drain, remove stems, and cut up into small pieces, using a knife or scissors. Beat eggs in a bowl; stir in flour, milk, salt, and baking powder. Add grated cheese and spinach, stirring until ingredients are well mixed. Melt margarine in a 9x13-inch baking pan. Pour spinach mixture into pan and smooth over. Bake at 350° for 30 minutes. Leave in pan and cut into bite-size pieces.

Can be frozen. Separate pieces and place in freezing bags. If frozen, thaw and heat at 300° for 10 –15 minutes.
