Orange Mint

Ingredients

2 1/2 cups water
2 cups sugar
juice of 2 orange and grated rind of both
juice of 6 lemon and grated rind of 2
2 handfuls fresh mint leaves

Directions:

Make a simple syrup of the sugar and water by boiling them together for 10 minutes. Add the juice of the fruits and the grated rind of the oranges and lemons. Pour this over the mint leaves, which have been well-washed. (I like to bruise a few of the leaves so that the flavor is more pronounced.) Cover tightly and let this brew for several hours. Strain through a sieve, then through one thickness of cheesecloth.

This makes one quart of rich juice, which may be kept in the refrigerator indefinitely.

To serve, fill tall glasses with finely powdered ice and pour 1/4 cup (4 tablespoons) of this juice over the snow-like ice, then finish filling the glass with either ginger ale or cold water.
