Tomato Peanut Sambal / Sambal Achan

Ingredients

1/4 cup chunky peanut butter
1/4 cup lime juice, fresh, or distilled white vinegar, or more to taste
1/4 cup soy sauce, sweet (ketjap manis) or 2 tablespoons each regular soy sauce and molasses, or more to taste
2 to 3 teaspoons sambal ulek or other chile paste, or more to taste
1 tomato, fresh, ripe, large, peeled and seeded, then diced
2 scallion, both white and green parts, trimmed and minced
1 clove garlic, minced
3 tablespoons cilantro leaves, minced fresh
1 teaspoon coriander, ground
1/2 teaspoon salt
1/2 teaspoon black pepper, freshly ground

Directions:

1. Combine the peanut butter, 1/4 cup lime juice, 1/4 cup sweet soy sauce, and 2 teaspoons sambal ulek in a small bowl and whisk to mix.

2. Stir in the tomato, scallions, garlic, cilantro, coriander, salt, and pepper. Correct the seasoning, adding sambal ulek, lime juice, or sweet soy sauce as necessary. The sambal will keep, tightly covered in the refrigerator, for up to 1 week.

Makes about 1 1/4 cups enough to serve 4 to 6
