Whenever you sit down to a meal of kebabs or kofta in the Middle East and Central Asia, you will be offered a dish of purplish red powder with a tart, lemony, almost sour plum flavor. This is sumac. Made from a Middle Eastern berry and available at Middle and Near Eastern and Armenian markets, sumac is used throughout the region as a seasoning for grilled meats and seafood. If unavailable, use a squeeze of lemon juice.
