Heat iron skillet or griddle pan to medium-high heat. Coat pan, if needed, with cooking spray or a dab of butter. In a wide-open bowl (cereal or soup bowl), lightly beat eggs and add milk, blending well. (You don’t want it too thin or too thick.) Stir in cinnamon and sugar; add salt if desired.
When skillet is heated through, dip 1 slice of bread in egg mixture, coating both sides. Place coated bread on hot skillet and repeat with as many as will fit. If you can only cook 2 at a time in a pan or skillet, just re-stir egg mixture before each dipping. Cook each piece until lightly browned on both sides and egg coating looks fully cooked.
Place French toast on plates and serve warm with butter and syrup. If desired, you can dust with a little powdered sugar for a frugally elegant touch!
*Day old, white, whole wheat, honey wheat, or diagonally sliced French bread can be used.
