Dollar Pancakes with Blueberry Sauce

Ingredients

1 cup all-purpose flour
1 teaspoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg
3/4 cup evaporated milk
1/2 cup water
2 tablespoons soft butter

Blueberry Sauce:
3/4 cup water
1/4 cup sugar
1 tablespoon lemon juice
1 teaspoon cornstarch mixed with 1 tablespoon water
1 (16-ounce) can blueberries, drained or 2 cups fresh blueberries

Directions:

Mix dry ingredients together. Beat egg, milk, and water together and add to dry ingredients. Beat well and add soft butter. (It mixes better if you melt the butter.) Spoon silver-dollar-sized pancakes on hot griddle and fry on both sides till done. Keep warm. Serve with lots of crispy fried bacon and pass the Blueberry Sauce.

Blueberry Sauce:
Boil water and sugar; add lemon juice. Mix in cornstarch mixture; cook 1 minute, stirring constantly. Add blueberries and cook about 1/2 minute.
