Brunch Casserole

Ingredients

4 cups cubed day-old white or French bread
2 cups shredded Cheddar cheese
10 eggs, lightly beaten
1 quart milk
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon onion powder
freshly ground pepper to taste
8 - 10 slices bacon, cooked, crumbled
1/2 cup sliced mushrooms
1/2 cup chopped, peeled tomato

Directions:

Generously butter a 9x13-inch baking dish. Arrange bread cubes in baking dish and sprinkle with cheese. In a bowl, add the next 6 ingredients and mix. Pour evenly over bread. Sprinkle mixture with bacon, mushrooms, and tomatoes. Cover and chill up to 24 hours. To bake, preheat oven to 325° and bake, uncovered, for 1 hour or until set. Tent with foil if top begins to over brown.
