Duck Gumbo

Serves: 4

2 ducks breasts, cubed
1 cup milk
1/2 cup flour
1 yellow onion
1 (16-ounce) bag frozen cut okra
beef bouillon
2 cans spiced tomatoes
1/2 pound smoked sausage
1 bay leaf
1 clove garlic, crushed
1 dash cayenne pepper
salt and pepper
1/4 to 1/2 cup water, or wine


Soak duck in milk overnight. Drain and toss the milk. Coat duck in flour and brown with the onion. Put in a Dutch oven with the rest of the ingredients and water or wine. Bake in DO until done, about 1 hour. Serve with rice.
