Quick Dutch Oven Pizza

Ingredients

1 12-14 inch refrigerated pizza crust *
1 jar (small) pizza sauce or homemade pizza sauce
1 package sliced pepperoni or other desired meat topping
olives, diced
tomato, diced or sliced
onion, diced
green bell pepper, diced
1/2 cup grated mozzarella cheese
1/2 cup grated Cheddar cheese
1/4 cup Parmesan cheese
other toppings, as desired

Directions:

Coat the pizza pan with a thin layer of vegetable oil to prevent sticking no matter which type of crust* you choose. Put the oiled pan in a 16-inch Dutch oven. Place the crust in the pizza pan. Smear the pizza sauce over the crust to within one-half inch of the edges. Arrange the pepperoni or meat topping evenly on top of the sauce. Distribute the other condiments over the pizza. Sprinkle the mozzarella and cheddar cheese over the toppings and sprinkle the Parmesan cheese on top. You may choose to add the toppings in another order. There is no wrong way to do this, only lots of right ways. Put the lid on the Dutch oven, and place over 4-5 briquets in the firepan. Place 18-20 briquets on the lid. If using a pre-baked crust, bake for about 15 minutes or until heated thoroughly and the cheese melts. If baking entirely, bake for 20-25 minutes. Remove from heat and take off the lid. Slide the pizza pan from the Dutch oven, cut, and serve.

*NOTE: There are several options in choosing your pizza crust. The choice may depend on how much time you have. The simplest one is to buy a ready-made crust in the store, whether completely baked or one that is partially baked. Using one that is already pre-baked will cut down on the baking time for the pizza. Another option for the crust is to use a packaged mix and make according to the instructions. Also available are crusts in the dairy section of the grocery store. Just open the can and roll out the crust. However with this method, you will need to transform the pizza crust from a rectangle shape to a circular shape, but this can be done easily.
