Chile 'N' Cheese Spirals

Serving Size: 1 tortilla
This treat is a family favorite for river trips, parties, or at home. It’s great as an hors d’oeuvre or to tide the kids over before supper. Finely dice some jalapenos to give it some zip.


   _ ounces cream cheese, softened
   _ cup shredded Cheddar cheese (4-oz)
   ___ cup diced green chilies (4-oz)
   ___ cup sliced green onions (about 3)
   ___ cup chopped red bell peppers
   ___ cup chopped ripe olives (2 1/4-oz can)
   _ to 6 soft taco-size flour tortillas (8-inch)
   Salsa, on the side


Combine cream cheese, cheddar cheese, chiles, green onions, red pepper, and olives in a medium-size bowl. Spread 1/2 cup mixture over each tortilla, then roll up. Wrap each roll in plastic wrap and refrigerate for 1 hour. Remove plastic wrap and slice each roll into six 3/4 inch pieces. Serve with salsa for dipping.
