Fresh Flour Tortillas

Ingredients

2 cups flour
3 tablespoons cold bacon fat, lard or Crisco shortening
3/4 teaspoon kosher salt
1/2 teaspoon baking soda
3/4 cup water

Directions:

In a medium bowl, mix flour, shortening, salt and baking powder, with a fork until mixture is crumbly stir in water. Place dough on a lightly floured board and knead just until a smooth dough is formed. Cover with a clean linen cloth and let rest 30 minutes. Divide dough into 12 equal pieces. Roll each piece into a 6 to 7 inch circle. Heat a 12-inch Dutch oven lid over medium high heat for about 2 minutes on each side until lightly browned and puffed. Serve warm.
