Spinach-Apple Salad

Ingredients

10 ounces fresh spinach
1/2 pound (2 large) tart apple such as Granny Smith, cored and sliced
1/4 cup corn or olive oil
1 1/2 tablespoons wine vinegar
2 teaspoons lite soy sauce
1/2 teaspoon dry mustard
1/2 teaspoon sugar
1 teaspoon lemon juice
1 teaspoon hot pepper sauce, such as Tabasco (to taste)

Directions:

1. Remove tough spinach stems. Rinse leaves thoroughly and pat dry. Tear or cut into bite-size pieces.

2. Add apple slices.

3. Combine remaining ingredients. Toss with spinach and apple.

4. Serve in bowls.
