Eggless Tofu Mayonnaise


Serves: 12

Ingredients

1 cup (8-oz) firm tofu, drained
1 tablespoon Dijon style mustard
3 tablespoons lemon juice, divided
1/2 cup safflower oil
salt and pepper (to taste)

Directions:

1. In blender, place tofu, mustard, and half of the lemon juice. Blend until combined.

2. Very slowly, blend in oil and the rest of the lemon juice, drop by drop. Stop blender several times and scrape sides of jar with rubber scraper. The slower the ingredients are combined the thicker the mayonnaise will be.

3. Add salt and pepper to taste.

4. Cover and chill. Will keep at least two weeks.

Balance with a lower-fat dishes on days you use this recipe.
