Oven-Fried Onion Rings

Ingredients

1 large sweet or Spanish-type onion (8 to 10-oz)
1 tablespoon corn oil
2 tablespoons cornmeal
2 tablespoons fine bread crumbs
1 tablespoon Parmesan cheese
1/8 teaspoon paprika

Directions:

1. Peel onion slice into 1/4 inch rings.

2. Sprinkle with oil and toss to coat.

3. Mix dry ingredients, sprinkle over onion rings, and toss to coat evenly.

4. Place on a nonstick baking sheet. Bake at 400°F for 20 minutes or until lightly browned.
