Spinach Salad with Walnut Dressing

Ingredients

Walnut Dressing
1/4 cup vegetable oil
2 tablespoons lemon juice
1 tablespoon honey
2 teaspoons Dijon style mustard
1/4 teaspoon salt
dash black pepper
2/3 cup walnuts coarselychopped
2 tablespoons green onions sliced
Salad
4 cups spinach torn in bite-size pieces
4 ounces gorgonzola cheese or Swiss cheese, diced (about 1 cup)
1 cup diced fruit, such as apples, peaches, or pears* (optional)

Directions:

In a small bowl or glass jar, whisk oil, lemon juice, honey, mustard, salt, and pepper. Add walnuts and green onions mix well. Cover and let stand 30 minutes for flavor to develop.

Meanwhile, in a medium salad bowl, layer spinach, cheese, and optional fruit. Cover and chill if prepared ahead.

To serve, pour dressing over salad and toss.


*Dip fruit in lemon juice to prevent discoloration.

NOTE: If desired, substitute other greens such as romaine, radicchio, or leaf lettuce for some of the spinach.
