Spinach Salad with Walnut Dressing

Serves: 4

   Walnut Dressing
   ___ cup vegetable oil
   _ tablespoons lemon juice
   _ tablespoon honey
   _ teaspoons dijon style mustard
   ___ teaspoon salt
   Dash black pepper
   ___ cup walnuts coarselychopped
   _ tablespoons green onions sliced
   Salad
   _ cups spinach torn in bite-size pieces
   _ ounces gorgonzola cheese or Swiss cheese, diced (about 1 cup)
   _ cup diced fruit, such as apples, peaches, or pears* (optional)


In a small bowl or glass jar, whisk oil, lemon juice, honey, mustard, salt, and pepper. Add walnuts and green onions; mix well. Cover and let stand 30 minutes for flavor to develop.

Meanwhile, in a medium salad bowl, layer spinach, cheese, and optional fruit. Cover and chill if prepared ahead.

To serve, pour dressing over salad and toss.


*Dip fruit in lemon juice to prevent discoloration.

NOTE: If desired, substitute other greens such as romaine, radicchio, or leaf lettuce for some of the spinach.
