Snickerdoodles

Ingredients

1 cup vegetable shortening, softened
1 1/2 cups sugar
2 eggs
2 1/4 cups flour, stirred and measured
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons sugar
2 teaspoons cinnamon

Directions:

In large mixing bowl, cream shortening and 1 1/2 cups sugar add eggs beat until light and fluffy. Stir together flour, cream of tartar, soda, and salt stir into shortening mixture until well blended. Roll dough into balls the size of small walnuts, then roll in mixture of 2 tablespoons sugar and cinnamon. Place 2 inches apart on ungreased baking sheet. Bake at 400 degrees F. for 8 to 10 minutes or until cookies have barely flattened out and are slightly browned. (Cookies puff up at first, then flatten out with crinkled tops.) Makes 5 dozen 2-inch cookies.
