Quick and Easy Cassoulet

2 chicken breasts
1 onion chopped
1 clove garlic minced
2 tablespoons vegetable oil
2 (1-pound) cans northern beans, drained
1/2 pound smoked sausage fully cooked and cut in 1/2-inch pieces
1 (8-ounce) can tomato sauce
1/2 teaspoon thyme crushed
salt to taste
1/8 teaspoon black pepper


Skin and bone uncooked chicken breasts cut into 1-inch pieces. Saute chicken, onion, and garlic in oil in heavy saucepan until onion is tender and chicken lightly browned. Stir in remaining ingredients, cover and simmer 15 minutes or longer.
