1 1/2 cups ground pork
1 7 1/2-ounce can tuna Albacore, drained and flaked
1 teaspoon ginger minced fresh or 1/2 teaspoon ground ginger
2 tablespoons red onions minced
1 clove garlic minced
1/2 teaspoon salt
2 teaspoons lime rinds grated
2 tablespoons lime juice fresh
2 tablespoons coconut ground, roasted
1/2 cup peanuts chopped
1 teaspoon chili powder
1/2 teaspoon coriander ground
1/3 cup mayonnaise real
Shredded lettuce
Cook ground pork in skillet without oil for 5 minutes or until well cooked; drain off excess grease. Place in bowl with tuna, ginger, red onion, garlic, salt, lime rind and juice, coconut, peanuts, chili powder, and coriander; blend well. Add mayonnaise and blend; if necessary, add more mayonnaise to make a moist consistency. Chill. (Ginger flavor increases with length of refrigeration time.) Place 2 tablespoons filling in each half of pita and top with shredded lettuce.
