8 eggs hard-cooked, coarsely chopped
4 green onions minced
1 rib celery minced
1/3 cup green olives minced pimiento stuffed
1/3 cup mayonnaise real
1 teaspoon lemon juice fresh
Salt and freshly ground pepper to taste
1 cup lettuce shredded, washed, and crisped iceberg
In a small bowl, combine eggs, onions, celery, and olives. Stir in enough mayonnaise to make of spreading consistency. Add lemon juice, a sprinkling of salt, and freshly ground pepper to taste. Blend in lettuce and a bit of additional mayonnaise if needed.
