Polish Vegetable Soup |

3 cucumbers pared, seeded, and diced
3 cups beets minced cooked
1/2 cup celery minced
2 cloves garlic minced
1/2 teaspoon salt
1 cup chicken broth
1 cup sour cream
3 cups evaporated milk
1 cup water
1/2 cup parsley minced fresh
1/4 cup green onions minced
Salt and freshly ground pepper to taste
Beets, cut in julienne strips
Cucumber cut in julienne strips
Fresh parsley sprigs

In a bowl combine cucumbers, beets, celery, and garlic with salt. Blend together stock, sour cream, milk, and water; add parsley and onions. Stir into cucumber mixture; sprinkle with salt and pepper. Chill; adjust seasonings just before serving. Serve each bowl with a garnish of beet and cucumber julienne strips, and a sprig of parsley.
