Ingredients

2 slices bacon
3 plantains large ripe or 4 firm bananas, peeled and sliced lengthwise
2 to 3 tablespoons vegetable oil or bacon fat
1/2 pound ground beef
1/2 cup onion chopped
1 garlic small, minced
1 teaspoon oregano
1/2 teaspoon salt
1/8 teaspoon black pepper
1 (8-ounce) can tomato sauce
1 (8-ounce) can green beans cut, drained
2 eggs hard-cooked, chopped
1 tablespoon raisins
1 (4-ounce) can green chili diced (optional)
1/4 cup ham chopped (optional)
Sliced stuffed olives (optional)
4 eggs beaten

Directions:

Preheat oven to 350°. Lightly grease bottom of a 9 x 5 x 3-inch loaf pan. In a 10-inch skillet over medium heat, fry bacon until crisp remove bacon and set aside. Sauté plantains or bananas in oil or bacon fat for 2 minutes on each side or until lightly browned. Remove and set aside.

In same skillet over medium heat, sauté ground beef, onion, garlic, oregano, salt and pepper until meat loses its pink color. Drain off fat. Stir in tomato sauce, green beans, hard-cooked eggs, bacon, raisins and any of the optional ingredients desired.

Layer in order: 1/2 of the beaten eggs, 1/3 of the plantains or bananas, 1/2 of the meat mixture, 1/3 of the plantains or bananas, remaining meat mixture, remaining plantains or bananas, and remaining beaten eggs. Bake for 30 to 40 minutes or until eggs are set and top is golden brown.
