Open-Faced Reubens

Ingredients

4 slices rye bread
2 tablespoons butter or margarine, softened
2 tablespoons mustard prepared
1/4 pound corned beef thinly sliced
1/2 cup sauerkraut rinsed and drained
4 slices Swiss cheese

Directions:

Preheat broiler. Lightly grease a baking sheet. Spread each slice of bread with butter and mustard. Layer on bread, in order, corned beef, sauerkraut and cheese. Place on baking sheet.

Broil 6 inches from heat source for 2 to 3 minutes or until cheese melts. If desired, cut in half.

To Microwave: Place one open-faced sandwich at a time on a paper towel-lined microwavable plate. Microwave, uncovered, at 100% power for 45 seconds or until heated through and cheese melts.
