New Orleans Jazz Combo

Ingredients

1/4 pound shrimp medium or large peeled, cooked
1/2 cup ham chopped cooked
1/2 cup chicken chopped cooked
1/4 cup green bell pepper chopped
1/4 cup green onion chopped, including some green
1 teaspoon lemon juice
1/8 teaspoon salt
1/8 teaspoon black pepper
1 to 3 dash hot pepper sauce
1/3 cup mayonnaise
4 slices French bread (1-inch), toasted
Leaf lettuce
4 tomatoes thin firm
Parsley sprigs

Directions:

Set four shrimp aside for garnish. Chop remaining shrimp.

In a medium bowl, combine shrimp, ham, chicken, green pepper, green onions, lemon juice, salt, pepper and hot pepper sauce. Stir in mayonnaise until all ingredients are coated.

Top French bread with lettuce. Spread filling on lettuce. Top each with a tomato slice and garnish with a reserved shrimp and parsley.
