Mushroom And Cheese Sandwiches

1 (8-ounce) package sharp cheddar cheese shredded (about 2 cups)
1 (4-ounce) can mushrooms mushroom stems and pieces
1/3 cup mayonnaise
2 tablespoons green onions finely chopped
2 tablespoons green bell peppers finely chopped
1/2 teaspoon Italian seasoning dried crushed
4 eggs
1/2 cup milk
16 slices bread firm, such as sourdough, Italian or potato
1 to 3 tablespoon butter or margarine


In a medium bowl, stir cheese, mushrooms, mayonnaise, green onions, green pepper and Italian herbs until blended.

In a pie plate with a wire whisk, beat eggs and milk until blended.

Spread about 1/4 cup of the cheese mixture on half of the slices of bread and top with a second slice of bread. Dip both sides of sandwiches in egg mixture.

Heat a large non-stick skillet or griddle over medium heat. When hot, melt 1/2 tablespoon of the butter. Brown sandwiches, a few at a time, for 2 to 3 minutes on each side, using additional butter as needed. Transfer to an ovenproof platter and keep warm in a preheated 200° oven while grilling remaining sandwiches.

Cut sandwiches in half before serving.
