1 1/2 cups flour
1/3 cup unsweetened cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
1/2 cup butter or margarine, softened
1/2 cup sour cream
1 egg
1 1/2 teaspoons vanilla extract
48 thin round chocolate mint patties

Preheat oven to 375°. Lightly grease baking sheets.
In a medium bowl, stir flour, cocoa powder, baking powder, baking soda and salt; set aside.
In a large mixer bowl at medium speed, beat sugar and butter until creamy. Add sour cream, egg and vanilla; beat until well blended. At low speed, beat in flour mixture until blended and no streaks remain. Drop about 1/2 tablespoon of dough about 2 inches apart on baking sheets.
Bake for 8 to 9 minutes or until edges are set and tops are soft-set. Cool on baking sheets for 1 minute, then make "sandwiches" by placing one mint patty between two cookies. Place on a flat surface. When mint patty melts slightly, gently press together. Transfer cookies to wire racks to cool completely.
Store in an airtight container in a cool place.
