1/4 cup mayonnaise reduced-calorie
1/2 teaspoon Dijon style mustard
1/4 teaspoon celery seeds
1 cup cabbage finely shredded
1/2 cup carrot coarsely shredded
1 egg hard-cooked, chopped
4 slices wheat bread
2 teaspoons margarine reduced-calorie
8 slices ham luncheon meat
16 slices cucumbers
8 slices tomatoes
4 green olives pimiento-stuffed (optional)


In a medium bowl, mix mayonnaise, Dijon mustard and celery seeds until blended. Add cabbage, carrots and egg and stir until well coated.

Lightly spread bread with margarine. Top with vegetable mixture. Fold ham slices and place two on each sandwich. Add cucumber and tomato slices. Garnish each with an olive.

Note: You may want to eat this sandwich with a knife and fork.
