Hamburger Vegetable Soup with Cheese

1/2 pound ground beef
2 onions chopped
4 cups water
1 (29-ounce) can tomato
5 potatoes, pared and cubed
3 carrots, cleaned and cubed
1 teaspoon salt
1 bay leaf
2 cups Monterey Jack cheese, cubed


In 8-quart kettle brown ground beef with onion. Add water, tomatoes, potatoes, carrots, salt, and bay leaf. Simmer, partially covered, until vegetables are tender, about 1 hour. Just before serving, stir in cheese cubes.
