Broccoli Cheese Soup

Ingredients

5 1/2 cups milk
1/2 pound broccoli chopped
3 tablespoons onions chopped
2 tablespoons butter
1 tablespoon flour
2 cups Cheddar cheese, shredded
1/4 teaspoon salt

Directions:

Heat milk in large saucepan until simmering. Cook broccoli (1 package [10 ounces] frozen chopped broccoli may be substituted for fresh) and onion in milk until tender, about 10 minutes. Cream together butter (or margarine) and flour until smoothly blended. Add butter and flour mixture to milk, stirring with wire whisk until blended in. Cook and stir 3 minutes. Remove from heat and add shredded cheese (Swiss cheese may be substituted for Cheddar) and salt. Stir until cheese is melted. Serve immediately.
