1/3 cup water boiling
2 cups apples, pared and finely chopped
2 cups flour, stirred and measured
1 1/4 cups sugar
1 1/4 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves ground
1/2 cup vegetable oil
3 eggs
1 teaspoon vanilla extract
1 cup walnuts coarsely chopped
Grease and flour 9x13-inch or 9x9x2-inch pan; set aside. Pour boiling water over apples. In large mixing bowl combine dry ingredients. Add oil, eggs, vanilla, and apple and water mixture. Beat together on medium speed until well blended, about 1 minute. Stir in nuts. Pour batter into prepared pan. Bake at 350 degrees F. for 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool. If desired, frost with 1/2 recipe of Cream Cheese Frosting or Lemon Butter Fluff Frosting (recipes in this cookbook).
