Deli-Style Pasta Salad

Serves: 4

   1 8-ounce package macaroni salad, such as rotini
   3/4 cup ranch salad dressing
   1 tablespoon cider vinegar
   1/8 teaspoon black pepper
   4 ounces provolone cheese diced (1 cup)
   4 ounces beef salami coarsely chopped ( 1/2 cup)
   2 tomatoes small, peeled, seeded, and diced ( 1/2 cup)
   1/2 cup spinach coarsely chopped leaves, lightly packed
   1/4 cup red onions chopped


Cook pasta according to package directions; drain. Transfer to a large salad bowl; let cool.

In a small bowl, stir together dressing, vinegar, and pepper.

Add cheese, salami, tomatoes, spinach, red onion, and dressing to pasta; lightly toss until coated. Chill at least 1 hour before serving.


Serve with hot garlic bread, sliced cucumbers, and Strawberry Brownie Shortcake or brownies.
