Creole Fish

Ingredients

1 (16-ounce) package frozen fish filet (sole or haddock)
1 (8-ounce) can tomato sauce
1/2 green bell pepper chopped
1 rib celery sliced
2 tablespoons tomato paste
1 tablespoon dried minced onion
1 teaspoon chicken bouillon
Lemon sliced
Parsley sprigs

Directions:

Microwave frozen package of fish at 30% power (210 watts) for 5 minutes to defrost the block just enough to cut into fourths. In a 9-inch glass pie plate, arrange the fish spoke-fashion.

In a medium bowl, stir tomato sauce, green pepper, celery, tomato paste, onion and bouillon until blended. Pour evenly around fish. Cover tightly with plastic wrap, piercing to allow steam to escape. Microwave at 100% power (700 watts) for 8 to 10 minutes or until fish flakes easily with a fork, rotating dish after 4 minutes.

Remove pie plate from oven, cover with foil and let stand for 5 minutes to blend flavors.

To serve, place fish on a warm platter, spoon sauce over fish. Garnish with lemon and parsley.
