Chicken with Pesto |

1 chicken - whole
1 lemon
1 quart chicken broth
Fresh herbs
Pesto:
6 fluid ounces olive oil
1 1/2 ounces pine nuts
3 ounces basil - fresh
1 1/2 teaspoons garlic - chopped
2 ounces parmesan cheese - grated
2 ounces romano cheese - grated
Salt and Pepper

In a stockpot place chicken, broth and herbs. Quarter lemon and add enough water to cover the chicken. Simmer until chicken is cooked.
Pesto:
Place 1/3 of the olive oil in a food processor or blender and add all remaining ingredients.
Blend until smooth add the remaining olive oil and blend to incorporate.
