Chicken Drumlets |

24 to 36 chicken drumsticks
1/2 cup soy sauce
1/3 cup sherry
1/4 cup frozen orange juice concentrate,frozen orange
1/4 cup brown sugar
1 clove garlic minced
1/2 teaspoon ginger ground or 1 teaspoon fresh ginger, grated
3 drops hot sauce
Flour, salt and pepper
4 cups vegetable oil for frying

Soak drumlets (approximately 2 hours) in marinade composed of the ingredients listed with the exception of flour, salt and pepper and oil for frying. Besure all pieces of meat are covered and turn from time to time. Drain drumlets and let sit a few minutes, then dredge in flour, salt and pepper. Fry in deep fat until golden brown. Drain on paper towels and keep warm, or cool and reheat on cookie sheet in 325° oven just before serving.
