California Crab Sandwiches

1 (3-ounce) package cream cheese softened
2 avocados ripe
3 tablespoons green onions thinly sliced, including some green
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon black pepper
4 croissants split
8 ounces imitation crab meat thawed if frozen


In a medium bowl with a fork, stir cream cheese until fluffy. Mash avocado and stir into cream cheese with green onions, lemon juice, salt and pepper until well blended.

Spread avocado mixture on cut side of opened croissants. With paper towels, pat crab meat dry and cut into bite-size pieces. Place in croissants. Serve within 1 hour.
