Basic Crepe Recipe

Ingredients

1 1/2 cups milk
1 cup flour
3 eggs
1 tablespoon sugar
1 tablespoon butter melted or salad oil
1/2 teaspoon salt

Directions:

Blend all ingredients together until smooth (batter must be free from all lumps). Brush a small 7 or 8-inch frying pan lightly with butter heat over moderately high heat until small drops of water sizzle and dance on it. Immediately pour about 2 tablespoons batter into middle of pan (use small measuring cup or ladle for pouring). Quickly tilt pan in all directions to cover bottom with a thin film of batter. Cook for about a minute on one side turn and cook about 1/2 minute on the other. (Final side will not brown well.) Slide crepe onto a plate continue with the rest of the batter. For each crepe, brush pan lightly with butter.
