Baked Lima Beans

Ingredients

1 pound lima beans dried
water
1 (10 1/2-ounce) can tomato soup condensed
1/2 pound bacon lean, or salt pork, cut in 1-inch pieces
1 cup onion chopped
1/2 cup brown sugar packed

Directions:

Rinse and pick over lima beans. Place beans in a deep 3- or 4-quart baking dish or Dutch oven. Add enough cold water to cover beans by 1 inch. Cover with lid and let stand overnight.

On the following day, do not drain the beans. Stir in soup, bacon or salt pork, onion and brown sugar.

Cover and bake in a preheated 300° oven for 5 hours or until beans are tender and sauce is thickened.

Stir before serving.

Note: Lima beans can be made in a slow cooker. Place soaked beans with liquid in slow cooker. Stir in remaining ingredients. Cover and cook on low for 10 to 12 hours or until beans are tender. If desired, tilt lid and cook on high 30 minutes longer to thicken.
