American-Style Fried Rice

Ingredients

3 1/2 cups white rice hot cooked
4 slices bacon lean
1 tablespoon butter or margarine
1/2 cup green onion sliced
1/2 cup green bell pepper chopped
1/4 cup almonds sliced
2 teaspoons parsley dried
1/4 teaspoon salt
1/8 teaspoon black pepper
1 egg large, beaten

Directions:

After preparing rice according to package directions, cover and keep warm set aside.

In a large skillet over medium heat, fry bacon until crisp. Drain bacon on paper towels crumble when cool.

Add butter or margarine to bacon drippings. Over medium heat, saute green onions, green pepper and almonds for 5 minutes or until vegetables are tender but not browned. Add hot cooked rice, crumbled bacon, parsley flakes, salt and pepper, tossing until blended and rice has fried slightly. Pour egg over mixture. Cook and stir for 2 to 3 minutes or until rice is coated and egg is set.

Serve immediately.
