Apricot Chutney

Serves: 4

   _ 15-ounce cans apricot halves
   _ cups brown sugar
   _ cups white vinegar
   _ cup onions chopped
   _ cup raisins golden
   _ apples finely chopped
   ___ cup ginger diced crystallized
   _ tablespoon mustard seeds
   _ teaspoon chili powder
   _ teaspoon cloves ground
   _ teaspoon salt
   _ clove garlic minced


Drain and chop apricots; reserve syrup. Heat apricot syrup and remaining ingredients, except apricots, in a large saucepan. Simmer, covered, for 45 minutes. Add apricots; simmer, uncovered, an additional 45 minutes. Pour into sterilized jars; seal with paraffin.
