Spinach Stuffed Manicotti

Ingredients

1 pound ground meat
1 onion, chopped
1 teaspoon chopped garlic
1/2 green bell pepper, chopped
14 ounces chopped spinach
1 Salt and pepper to taste
1/4 cup cottage cheese
2 eggs, well beaten
14 cooked manicotti shells
1 (26-ounce) jar spaghetti sauce
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese

Directions:

Cook ground meat, onion, garlic, and bell pepper; season to taste. Drain well and set aside to cool. Cook and drain spinach, cool; add cottage cheese and eggs; mix well. Add to meat mixture. Stuff shells with mixture and place in oiled 9x13-inch pan. Pour spaghetti sauce over manicotti shells. Sprinkle with Parmesan cheese, then sprinkle with mozzarella. Preheat oven to 350° and bake 30 minutes.
