Ingredients

Sauce:
1 1/2 cups chopped onions
1/2 teaspoon garlic powder
2 pounds ground beef
5 (7-ounce) cans tomatoes, undrained
1 (8-ounce) can tomato sauce
2 tablespoons chopped parsley
1 tablespoon salt
2 tablespoons sugar
1 tablespoon Italian seasoning
1/4 teaspoon pepper
1 (4-ounce) can sliced mushrooms (optional)
1 1/2 cups water

Filling:
2 pounds ricotta cheese
1 (8-ounce) package mozzarella cheese, diced
1/3 cup grated Parmesan cheese
2 eggs
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped parsley
1/4 cup grated Parmesan cheese, divided
1 package manicotti noodles, cooked

Directions:

Sauce:
Sauté onions, garlic, and ground beef—may use a little oil if necessary. Add other ingredients, mashing tomatoes with fork. Bring to a boil and reduce heat. Simmer, covered, stirring occasionally, for 1 hour.

Filling:
Combine all ingredients except 1/4 cup Parmesan and noodles. Blend well. Spread about 1/4 cup Filling down each manicotti noodle. Spoon a little sauce in casserole dishes, then place noodles on top. Cover with rest of sauce and sprinkle with remaining Parmesan. Bake at 350°, uncovered, 1/2 hour.
