Shrimp Mousse

2 envelopes unflavored gelatin
4 tablespoons water
4 cups thousand island salad dressing
1/2 cup diced celery
2 tablespoons lemon juice
3 (7-ounce) cans tiny shrimp, washed, or 1/2 cup chopped cooked shrimp


Soften gelatin in cold water and dissolve over hot water. Combine with remaining ingredients, mixing well. Pour into an oiled 6-cup mold and chill for 6–8 hours. Unmold on serving platter and serve with wheat crackers.
