Lemon Chess Tarts

Ingredients

4 eggs, slightly beaten
1 1/2 cups sugar
6 tablespoons butter, melted and cooled
1/4 cup milk
1 tablespoon cornmeal
3/4 teaspoon grated lemon rind
1 tablespoon lemon juice
16 unbaked tart shells

Directions:

In mixing bowl, combine eggs, sugar, butter, milk, cornmeal, lemon rind, and lemon juice, stirring well to distribute sugar. Place tart shells on cookie sheet and divide filling evenly among the 16 shells. Bake at 350° for 35–40 minutes or until knife inserted in center comes out clean. Cool on wire rack. Cover and chill to store.
