Delicious Crawfish Dip

Serves: 5

2 bunches green onions, chopped
1/4 bunch parsley, chopped
1 stick margarine or butter
3 tablespoons flour
1 (12-ounce) can evaporated milk
1 egg yolk, beaten
1 Salt and pepper to taste
1 pound crawfish tails in a bag (add any fat in bag)
1/2 pound Mexican Velveeta cheese


Sauté onions and parsley in butter. Sprinkle in flour. Add evaporated milk. Stir over heat until thick. Remove from heat and stir in egg yolk. Season. Add crawfish tails and cheese. Return to heat and cook over low heat 10 minutes while stirring constantly. Serve with good crackers or chips.
